Two Independent Food Businesses Join Gloucester’s Food Dock

Two exciting new independent food businesses are set to strengthen Gloucester’s evolving food and drink scene as the Food Dock continues to play a key role in the city’s regeneration.

The Food Dock is preparing to welcome two new independent operators to its much-loved food and drink neighbourhood this New Year. With all but one of its 15 spaces now occupied, the Food Dock’s growing community continues to bring fresh energy, creativity, and opportunity to the city, reinforcing its position as a central part of Gloucester’s regeneration story.

Specialising in South Indian street food favourites including dosa, vada, uttapam and kothu, Mazala Dosa will introduce both bold flavours and a contemporary dining experience. The space will blend South Indian design influences with the Food Dock’s existing Victorian features of exposed beams and brickwork, alongside views across the docks.

Mazala Dosa will also become one of the first restaurants in Gloucestershire to use autonomous service robots to deliver dishes, adding a playful and innovative element to the dining experience.

“Opening Mazala Dosa at the Food Dock marks an exciting first step for us. Dosa sits at the heart of South Indian street food, a naturally fermented, everyday staple that’s both nourishing and full of flavour. We’re especially proud to be the first in Gloucestershire to introduce service robots as part of our team,” said Co-Founder Omer Rahim.

Joining them is Wagyu & Feather, a premium street food concept founded by Paul and Karen Sheeran, which will take up permanent residency on the Food Dock Deck. While launching as a restaurant in its own right, Wagyu & Feather will also collaborate closely with Hop Kettle Brewery, providing food and bar snacks for brewery customers.

The menu focuses on high-quality British Wagyu, alongside buttermilk chicken and a daytime deli sandwich offering, with dishes prepared fresh and cooked to order. Selected Hop Kettle Brewery products will also feature within batters, sauces, and seasonal specials.

“The menu is built around high-quality British Wagyu, supported by carefully developed buttermilk chicken and a dedicated daytime deli sandwich offer,” said Co-Founder Paul Sheeran.

These latest additions build on the momentum created since the Food Dock opened at the end of 2023. Alongside developments such as the Forum and the University of Gloucestershire City Campus, the Food Dock continues to anchor itself within the Gloucester community and contribute to a changing commercial landscape.

“We are so excited to be welcoming not one but two fantastic new independents to the Food Dock community. Gloucester’s regeneration is gathering apace, and this is a real show of confidence in both the Food Dock and the city,” said Food Dock Co-Founder Ken Elliott.
